Herkomst koffiebonen
Koffie werd in 1723 voor het eerst in Colombia geïntroduceerd door de jezuïeten, maar de koffieproductie werd pas aan het einde van de 19e eeuw betekenisvol. De koffie wordt hier geproduceerd door bijna 500.000 (kleine) boerenbedrijven. In 1960 bedacht een reclamebureau het personage Juan Valdez als embleem van het kwaliteitslabel Café de Colombia. De arme koffieboer met zijn ezel werd geromantiseerd en stond voor de ambacht en kwaliteit.
Deze koffie uit de Andes wordt geteeld in een microklimaat dat zich leent voor de teelt van koffie, maar de topografie van Colombia maakt grootschalige teelt onmogelijk. Daarom ligt het accent op de kwaliteit van de productie. Er worden alleen Arabica-variëteiten geteeld.
